RECIPE / DOSAGE
LEVICHOUX 1000 gPour Levichoux mix in the mixer and blend for few seconds.
Hot water (50-55°C): 1300-1400 g

Pour a little of water and blend all ingredients in the mixer fitted with paddle:1 minute at speed 1 and 8 minutes high speed.
Strain with sac a poches in the desired forms and dimensions .
Bake at 200/220 °C with closed valve for 30 minutes, then at open valve for 3-4 minutes.
STORE IN A REFRIGERATOR.
